Casoncelli from Bergamo
INGREDIENTS FOR 4 PEOPLE:
500g Casonsèi de la bergamasca
100g diced pancetta
100g butter
Grana Padano grated
Sage to taste
PROCEDURE:
Cook casoncelli in boiling salted water for 5 minutes.
Melt butter in a skillet, add diced pancetta and plenty of sage leaves.
Drain the casoncelli, toss them quickly in the pan and serve with a generous sprinkling of cheese.
