Meat Tortellini with Walnut Sauce

500 g Meat Tortellini
300 g walnuts
250 ml milk
40 g breadcrumbs
30 g shelled pine nuts
1 clove of garlic
extra vergin olive oil
salt and pepper to taste

Blend the walnut kernels, the pine nuts, the garlic, the Parmesan cheese and the oil. Add the bread soaked in milk and drained, a pinch of salt and blend again. Add a little milk to make it creamier. Separately, put water on to boil. As soon as it starts boiling, add the tortellini and cook them for as long as necessary and then drain, reserving a ladleful of the pasta cooking water. Drain them with a slotted spoon and move them to the pan with the walnut sauce. Stir gently to mix the ingredients. Have a little taste and season with salt.
